Wacom One 2019 gen-1 vs Wacom One

New here and thinking of adding the above. That said what's the difference between models.

I currently have the intuos pro S and would think working on display would be better

  I would fully recommend you to try a pen display. 

  Be aware however, that the experience with pen will be different since you won't be able to use your Pro Pen 2 with these models. If you would like to keep using your Pro Pen 2 with a display, then consider the Cintiq line: https://www.wacom.com/en-de/products/pen-displays/wacom-cintiq
